I'd say Seasons 1-5 for me with Thrones. For Vikings I liked 1-4 and the last half of season 6. I'm more of a reader than a watcher, so I was really into the ASOIAF books until Martin went completely left in the brain and spent an entire novel writing about food.

The show is good, but it is heartbreaking for me to watch knowing how many storylines and character arcs end without sense or meaning in the “canon” ending as it exists. You will love your first watch, and it is worth it, even if it crushes you in the end, which is a very Game Of Thrones sort of way for it to have ended, ironically.
It is definitely awesome watching the second and (3rd+) times around because of all of things you pick up like you said. However, I will say that nothing beats watching episodes like The Red Wedding and The Winds of Winter (just to name a couple) for the first time.
Imagine having that same attitude about Star Wars, Indiana Jones, Pokémon 1st generation, etc. Great Things fizzle out quite often. Game of Thrones was and will always be a masterpiece. I actually can't wait for the REAL ending to be published. I never believed GRRMartin would give away the ending to his masterpiece.
At the very least watch the entire Season 1 and go from there! You should watch it, it's one of the better television shows ever. The story definitely starts falling apart over time, but it's also the best television production ever. The production design, music, etc. are incredible.
Lot of story lines going on at the same time and a lot of people getting killed like in game of thrones. Also littlefinger is in it he plays a similar power hungry character in season 3. It's very good and has a lot going on.
